Description

A delicious and vibrant dish combining sweet potatoes and beets, perfect as a healthy side or snack.


Ingredients

Scale
  • 3 medium sweet potatoes, peeled and diced
  • 23 beets, peeled and diced
  • 12 tablespoons olive oil
  • 12 teaspoons grade A maple syrup
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 420ยฐF and set a nonstick or lined baking sheet aside.
  2. Peel and dice the sweet potatoes and beets.
  3. Add the sweet potatoes and beets to a large bowl and drizzle with olive oil.
  4. Add the maple syrup, thyme, cinnamon, cayenne (if using), salt, and black pepper. Stir until evenly coated.
  5. Spread the mixture evenly across the baking sheet.
  6. Bake in the top rack of the oven for 35 to 40 minutes, or until tender with slightly crispy edges.
  7. Remove from the oven and serve warm as a side dish or snack.

Notes

For added flavor, drizzle with more maple syrup or a squeeze of lemon juice before serving. Store leftovers in an airtight container for up to 3 days.
