Description

A festive and rich Yule Log cake perfect for the holiday season, featuring a soft sponge and thick chocolate filling.


Ingredients

Scale
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 cup heavy whipping cream
  • 8 oz semi-sweet chocolate, chopped
  • Powdered sugar for dusting
  • Festive decorations (e.g., holly leaves, berries)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and sugar until pale and fluffy.
  3. Sift together the flour, cocoa powder, and salt, then fold into the egg mixture.
  4. Pour in the melted butter and mix gently until combined.
  5. Spread the batter evenly on the prepared baking sheet and bake for about 10-12 minutes or until the cake springs back when touched.
  6. Remove from the oven and let cool for 5 minutes.
  7. Turn the cake out onto a clean kitchen towel dusted with powdered sugar, and carefully roll it up from the short end.
  8. For the filling, heat the heavy cream until just boiling, then pour it over the chopped chocolate. Let it sit for a minute before stirring until smooth. Allow it to cool until thickened.
  9. Unroll the cooled cake and spread a layer of ganache over the surface, then re-roll it tightly.
  10. Use any remaining ganache to frost the outside of the Yule Log.
  11. Decorate with festive decorations and dust with powdered sugar before serving.

Notes

For serving, cut the log into thick slices. Dust with powdered sugar and add a small leaf or berry. Store in the refrigerator for up to 3 days or freeze for up to 1 month.
