Description

A decadent cake combining three types of chocolate into rich, airy mousse layers, perfect for special occasions.


Ingredients

  • 1 1/2 cups crushed Oreo cookies or chocolate biscuits
  • 1/4 cup melted butter
  • 4 oz dark chocolate (70% cocoa recommended)
  • 1 cup heavy cream
  • 1 tbsp sugar
  • 1 tsp unflavored gelatin (optional for stability)
  • 4 oz milk chocolate
  • 1 cup heavy cream
  • 1 tbsp sugar
  • 1 tsp unflavored gelatin (optional)
  • 4 oz white chocolate
  • 1 cup heavy cream
  • 1 tbsp sugar
  • 1 tsp unflavored gelatin (optional)
  • Chocolate curls
  • Cocoa powder for dusting
  • Fresh berries

Instructions

  1. Base: In a bowl, mix the crushed Oreo cookies with melted butter. Press the mixture into the bottom of a springform pan to form the base. Set aside.
  2. Dark Chocolate Mousse: Melt the dark chocolate using a microwave or double boiler. Whip 1 cup of heavy cream and 1 tablespoon of sugar until soft peaks form. Optionally, dissolve gelatin in water and add to the chocolate mixture. Fold the whipped cream into the melted dark chocolate, pour over the cookie base, and chill for 30 minutes.
  3. Milk Chocolate Mousse: Melt the milk chocolate. Whip another cup of heavy cream with 1 tablespoon of sugar until soft peaks form. Optionally, dissolve gelatin in water and add to the milk chocolate mixture. Fold the whipped cream into the melted milk chocolate and pour over the dark chocolate layer. Chill for another 30 minutes.
  4. White Chocolate Mousse: Melt the white chocolate. Whip the last cup of heavy cream with 1 tablespoon of sugar until soft peaks form. Optionally, dissolve gelatin in water and add to the white chocolate mixture. Fold the whipped cream into the melted white chocolate and pour over the milk chocolate layer. Chill for at least 3-4 hours or overnight, until set.
  5. Chill Completely: Ensure the cake is completely chilled and set before serving.
  6. Decorate and Serve: Remove the sides of the springform pan. Decorate with chocolate curls, dust with cocoa powder, and add fresh berries.

Notes

Use high-quality chocolate for best flavor. For a firmer mousse, consider using gelatin.
