Ingredients

- 1 Italian sausage
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper, to taste
- 2 cans white beans (cannellini or great northern), drained and rinsed
- 2 cups fresh spinach
- 4 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery, and sautรฉ until softened.
- Add garlic and Italian sausage, breaking it up as it cooks until browned.
- Stir in herbs and spices.
- Pour in broth and bring to a simmer.
- Add white beans and cook for about 10 minutes.
- Stir in fresh spinach just before serving until wilted.
- Adjust seasoning to taste and serve hot.
Notes
For extra flavor, let the soup sit for a few hours or overnight before serving. Can be stored in airtight containers in the fridge for up to 3 days or frozen for up to 3 months.
