Description

A warm and hearty soup combining nutritious white beans, fresh vegetables, and flavorful herbs, perfect for chilly days.


Ingredients

  • 1 Italian sausage
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper, to taste
  • 2 cans white beans (cannellini or great northern), drained and rinsed
  • 2 cups fresh spinach
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery, and sautรฉ until softened.
  3. Add garlic and Italian sausage, breaking it up as it cooks until browned.
  4. Stir in herbs and spices.
  5. Pour in broth and bring to a simmer.
  6. Add white beans and cook for about 10 minutes.
  7. Stir in fresh spinach just before serving until wilted.
  8. Adjust seasoning to taste and serve hot.

Notes

For extra flavor, let the soup sit for a few hours or overnight before serving. Can be stored in airtight containers in the fridge for up to 3 days or frozen for up to 3 months.
