Description

Delicious soft sugar cookies topped with creamy caramel and rich milk chocolate, these Twix Cookies are the ultimate treat for cookie lovers.


Ingredients

Scale
  • 1 cup (225 g) unsalted butter, room temperature
  • 1 cup (200 g) white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (312 g) all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • About 14 soft caramels or 1 cup dulce de leche
  • 6 oz (170 g) milk chocolate, chopped
  • 1 teaspoon oil or butter for the chocolate (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch pan or line it with parchment.
  2. Beat the butter and sugar in a bowl until light and smooth.
  3. Add the egg and vanilla. Beat until mixed.
  4. Mix the flour, baking powder, and salt in another bowl.
  5. Add the dry mix to the wet mix. Stir until you get a soft dough.
  6. Press the dough evenly into the bottom of the pan.
  7. Bake for 12 to 15 minutes, until the top looks set but not brown. Let it cool for 10 minutes.
  8. If using soft caramels, heat them with 1–2 tablespoons of cream or milk in a small pan until smooth.
  9. Spread the caramel over the warm cookie base in an even layer. Cool until firm, about 20–30 minutes in the fridge.
  10. Melt the milk chocolate with a little oil or butter in short bursts in the microwave or over simmering water. Stir until smooth.
  11. Pour the chocolate over the set caramel and spread to cover the top.
  12. Chill the pan until the chocolate sets, about 30 minutes. Cut into squares and serve.

Notes

For clean edges, cut with a hot knife (run under hot water and dry).
