Description
Delicious soft sugar cookies topped with creamy caramel and rich milk chocolate, these Twix Cookies are the ultimate treat for cookie lovers.

- 1 cup (225 g) unsalted butter, room temperature
- 1 cup (200 g) white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups (312 g) all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- About 14 soft caramels or 1 cup dulce de leche
- 6 oz (170 g) milk chocolate, chopped
- 1 teaspoon oil or butter for the chocolate (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch pan or line it with parchment.
- Beat the butter and sugar in a bowl until light and smooth.
- Add the egg and vanilla. Beat until mixed.
- Mix the flour, baking powder, and salt in another bowl.
- Add the dry mix to the wet mix. Stir until you get a soft dough.
- Press the dough evenly into the bottom of the pan.
- Bake for 12 to 15 minutes, until the top looks set but not brown. Let it cool for 10 minutes.
- If using soft caramels, heat them with 1–2 tablespoons of cream or milk in a small pan until smooth.
- Spread the caramel over the warm cookie base in an even layer. Cool until firm, about 20–30 minutes in the fridge.
- Melt the milk chocolate with a little oil or butter in short bursts in the microwave or over simmering water. Stir until smooth.
- Pour the chocolate over the set caramel and spread to cover the top.
- Chill the pan until the chocolate sets, about 30 minutes. Cut into squares and serve.
Notes
For clean edges, cut with a hot knife (run under hot water and dry).
