Description

Delicious and satisfying chicken enchiladas perfect for busy weeknights or family gatherings.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 tortillas
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC).
  2. In a bowl, mix shredded chicken, half of the enchilada sauce, and diced onion.
  3. Spoon the chicken mixture into each tortilla, roll them up, and place them seam-side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the top of the tortillas and sprinkle with cheese.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden.
  6. Garnish with chopped cilantro if desired and serve.

Notes
