Description

A Brookie is the ultimate dessert hybrid, blending a rich, fudgy brownie base with a chewy cookie layer. This recipe guides you through creating the perfect Brookie with balanced texture and indulgent flavor.

Ingredients

Scale

For Brownie Layer:

  • ½ cup (113g) unsalted butter
  • 4 oz (113g) semi-sweet chocolate
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ¼ cup (25g) cocoa powder
  • ¼ tsp salt

For Cookie Layer:

  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups (160g) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (90g) chocolate chips

Instructions

  1. Preheat & Prepare Pan:
Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
  2. Make Brownie Batter:
Melt butter and chocolate in a microwave-safe bowl or double boiler. Whisk in sugar, eggs, and vanilla. Fold in flour, cocoa powder, and salt until combined. Pour into prepared pan.
  3. Make Cookie Dough:
Cream butter and sugars until light. Beat in egg and vanilla. Mix in dry ingredients (flour, baking soda, salt). Stir in chocolate chips.
  4. Assemble Brookies:
Drop spoonfuls of cookie dough over brownie batter. Swirl gently for a marbled effect.
  5. Bake:
Bake 25–30 minutes, or until edges are set and the center is slightly soft. Cool completely before slicing.
  6. Serve:
Cut into squares and enjoy with milk or ice cream.

Notes

  • Slight underbaking keeps Brookies soft and gooey.
  • Freeze baked Brookies for up to 3 months; thaw before serving.
  • Add nuts or caramel for flavor variations.
