Ingredients

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 onion, chopped
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 4 cups beef broth
  • 3 garlic cloves, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat Oven: Set to 325°F (163°C).
  2. Season Roast: Rub salt and pepper over the chuck roast.
  3. Sear the Meat: Heat olive oil in a Dutch oven over medium-high heat. Sear roast on all sides until browned.
  4. Add Vegetables: Add onion, carrots, and garlic. Sauté for 3–4 minutes.
  5. Add Broth and Herbs: Pour in beef broth, add rosemary and thyme.
  6. Cover & Cook: Cover the pot and place in the oven for 3–4 hours, or until the roast is fork-tender.
  7. Serve: Slice or shred the beef, serve with vegetables and gravy.

Notes

  • For slow cooker: Cook on LOW for 8–10 hours or HIGH for 5–6 hours.
  • Add red wine for extra depth of flavor.
  • Leftovers make excellent sandwiches!
