Description

Deliciously moist banana bread that balances sweetness with spices, perfect for breakfast, snacks, or dessert.


Ingredients

  • 3 to 4 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher.
  3. Add melted butter to the mashed bananas and mix until smooth.
  4. Incorporate granulated sugar until the mixture is smooth and lighter in color.
  5. Crack in the eggs one at a time, beating well after each addition and then stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually add the dry ingredients to the banana mixture and fold gently until just combined.
  8. If using nuts, fold them into the batter now.
  9. Pour the batter into the prepared loaf pan and tap gently to remove air bubbles.
  10. Bake in the preheated oven for 55 to 65 minutes or until a toothpick comes out clean.

Notes

Allow to cool before serving. Can be stored at room temperature for up to 3 days or refrigerated for up to a week.
