Description

A rich and festive yule log cake that can be filled with Nutella mousse or eggnog cream, perfect for holiday meals or gatherings.


Ingredients

  • 4 large eggs, separated
  • ยฝ cup granulated sugar
  • โ…“ cup all-purpose flour
  • ยผ cup unsweetened cocoa powder
  • ยผ tsp salt
  • ยฝ tsp vanilla extract
  • ยพ cup heavy cream (for Nutella mousse)
  • ยฝ cup Nutella
  • 1 tsp vanilla extract (for Nutella mousse)
  • ยพ cup heavy cream (for eggnog cream)
  • โ…“ cup eggnog
  • 2 tbsp instant vanilla pudding mix
  • Pinch of nutmeg
  • 1 cup dark chocolate chips (for ganache)
  • ยฝ cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 10ร—15-inch jelly roll pan with parchment and lightly grease.
  2. In one bowl, beat egg whites until soft peaks form.
  3. In another bowl, beat yolks with sugar and vanilla until pale.
  4. Gently fold in sifted flour, cocoa, and salt, then fold in the egg whites.
  5. Pour into the prepared pan, smooth the top, and bake for 10โ€“12 minutes.
  6. While warm, invert onto a clean towel dusted with cocoa. Roll the cake with the towel and cool completely.
  7. Prepare your chosen filling.
  8. Unroll the cooled cake. Spread a thick layer of your chosen filling. Roll the cake back without the towel.
  9. Cover with ganache and use a fork to make bark lines. Chill for 30 minutes to set.
  10. Cut into slices and serve on a flat plate. Optionally, add powdered sugar or small holly leaves for decoration.

Notes

Beat egg whites well for a light sponge. Use a clean towel dusted with cocoa to avoid sticking.
