Description

Soft and tender muffins filled with sweet blueberries and a creamy center, perfect for breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup blueberries, fresh or frozen

Instructions

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a bowl, mix together the flours, sugar, baking powder, and salt.
  3. In another bowl, beat the cream cheese, milk, oil, and eggs until smooth.
  4. Combine wet and dry ingredients, mixing until just combined. Fold in blueberries.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

Serve warm with cream cheese or honey. Store in an airtight container at room temperature for up to 2 days or freeze for up to 2 months.
