- 2 cups Greek yogurt
- 1 cup blueberries (fresh or frozen)
- 1/4 cup honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- In a blender, combine the Greek yogurt, blueberries, honey (or maple syrup), vanilla extract, and lemon juice.
- Blend until smooth and creamy.
- Taste and adjust sweetness if necessary.
- Pour the mixture into a container and freeze for at least 120 minutes or until firm.
- Scoop and serve, optionally garnished with extra blueberries.
Notes
Store in an airtight container in the freezer for up to 2 weeks. Press plastic wrap onto the surface to prevent ice crystals.
