Delicious blueberry lemon pie bars with a soft buttery crust and creamy filling, perfect for snacks or dessert.

- 1 cup unsalted butter (melted)
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 8 ounces cream cheese (softened)
- 1 cup granulated sugar
- 2 large eggs
- 3 cups blueberries (fresh or frozen)
Instructions
- Preheat the oven to 350ºF (177ºC) and prepare an 8″ x 8″ baking pan by lining it with foil.
- Combine melted butter, sugar, vanilla extract, salt, lemon zest, and flour in a mixing bowl until smooth. Press into the bottom of the prepared pan to form the crust.
- Blend softened cream cheese and sugar in another bowl until creamy. Add eggs one at a time, mixing well after each addition. Stir in yogurt, lemon juice, salt, and flour until just combined.
- Pour the filling over the crust and top with blueberries.
- Bake for 30-35 minutes until set around the edges but slightly jiggly in the center. Allow cooling completely before slicing.
Notes
Use room temperature cream cheese and eggs for a smooth filling. If using frozen blueberries, do not thaw them.
