Description

Delicious blueberry lemon pie bars with a soft buttery crust and creamy filling, perfect for snacks or dessert.


Ingredients

  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 cups blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350ºF (177ºC) and prepare an 8″ x 8″ baking pan by lining it with foil.
  2. Combine melted butter, sugar, vanilla extract, salt, lemon zest, and flour in a mixing bowl until smooth. Press into the bottom of the prepared pan to form the crust.
  3. Blend softened cream cheese and sugar in another bowl until creamy. Add eggs one at a time, mixing well after each addition. Stir in yogurt, lemon juice, salt, and flour until just combined.
  4. Pour the filling over the crust and top with blueberries.
  5. Bake for 30-35 minutes until set around the edges but slightly jiggly in the center. Allow cooling completely before slicing.

Notes

Use room temperature cream cheese and eggs for a smooth filling. If using frozen blueberries, do not thaw them.
