Description

Cool and refreshing blueberry lemon popsicles that capture the essence of summer with sweet-tart blueberries and zesty lemons.


Ingredients

Scale
  • 2 cups vanilla yogurt
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 cup blueberries (fresh, ripe)

Instructions

  1. Wash the blueberries thoroughly and mash them slightly in a bowl.
  2. Combine the yogurt, lemon zest, and lemon juice in a separate mixing bowl. Stir until smooth.
  3. Fold the blueberries gently into the yogurt mixture.
  4. Pour the mixture into popsicle molds, filling them about 3/4 of the way.
  5. Insert sticks and freeze for at least 240 to 360 minutes, or until solid.

Notes

For sweeter popsicles, add honey or maple syrup. Store in the freezer wrapped or in a freezer-safe bag for up to 2 months.
