Cool and refreshing blueberry lemon popsicles that capture the essence of summer with sweet-tart blueberries and zesty lemons.
Ingredients

- 2 cups vanilla yogurt
- 1 tablespoon lemon zest
- 1/4 cup lemon juice
- 1 cup blueberries (fresh, ripe)
Instructions
- Wash the blueberries thoroughly and mash them slightly in a bowl.
- Combine the yogurt, lemon zest, and lemon juice in a separate mixing bowl. Stir until smooth.
- Fold the blueberries gently into the yogurt mixture.
- Pour the mixture into popsicle molds, filling them about 3/4 of the way.
- Insert sticks and freeze for at least 240 to 360 minutes, or until solid.
Notes
For sweeter popsicles, add honey or maple syrup. Store in the freezer wrapped or in a freezer-safe bag for up to 2 months.
