A delightful Brazilian carrot cake that is moist and rich, topped with decadent chocolate frosting.
Ingredients

- 2 cups grated carrots
- 1 cup sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cocoa powder
- 1 cup condensed milk
- 1/2 cup butter
- 1 cup chocolate sprinkles (for garnish, optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- Blend the grated carrots, sugar, vegetable oil, and eggs until smooth.
- Combine the flour, baking powder, salt, and cocoa powder in a large bowl.
- Pour the carrot mixture into the dry ingredients and mix until just combined.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Melt the butter in a saucepan over low heat, then add the condensed milk and cocoa powder, stirring constantly until thickened.
- Remove from heat and pour the chocolate frosting over the cooled cake. Top with chocolate sprinkles if desired.
