Description

A delightful Brazilian carrot cake that is moist and rich, topped with decadent chocolate frosting.


Ingredients

  • 2 cups grated carrots
  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 cup condensed milk
  • 1/2 cup butter
  • 1 cup chocolate sprinkles (for garnish, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. Blend the grated carrots, sugar, vegetable oil, and eggs until smooth.
  3. Combine the flour, baking powder, salt, and cocoa powder in a large bowl.
  4. Pour the carrot mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Melt the butter in a saucepan over low heat, then add the condensed milk and cocoa powder, stirring constantly until thickened.
  7. Remove from heat and pour the chocolate frosting over the cooled cake. Top with chocolate sprinkles if desired.
  8. Slice and serve your delicious Brazilian carrot cake!
