Description

A delightful one-pan dish combining tender chicken, seasoned rice, and gooey cheese, packed with flavor for a perfect weeknight dinner.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups chicken broth or water
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with salt, pepper, chili powder, and cumin. Cook until browned.
  3. Stir in the rice, black beans, corn, salsa, and chicken broth. Bring to a boil.
  4. Reduce heat to low, cover, and let simmer for about 20-25 minutes or until rice is cooked and liquid is absorbed.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Serve hot and enjoy!
