- 1 lb chicken breast, diced
- 1 cup rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups chicken broth or water
- Olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken and season with salt, pepper, chili powder, and cumin. Cook until browned.
- Stir in the rice, black beans, corn, salsa, and chicken broth. Bring to a boil.
- Reduce heat to low, cover, and let simmer for about 20-25 minutes or until rice is cooked and liquid is absorbed.
- Remove from heat and stir in the shredded cheese until melted.
- Serve hot and enjoy!
