Description

A delightful dessert that combines rich cheesecake flavors with a light chocolate cake, rolled up for an impressive presentation.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 15×10 inch pan.
  2. Beat together the eggs and granulated sugar until thick and pale.
  3. Fold in the flour, cocoa powder, and salt until well combined.
  4. Spread the batter evenly into the prepared pan and bake for 12-15 minutes, until the cake springs back when touched.
  5. Turn the cake onto a clean kitchen towel dusted with powdered sugar.
  6. Roll the cake tightly with the towel and let it cool completely.
  7. Mix the cream cheese, powdered sugar, and vanilla extract until smooth in a separate bowl.
  8. Unroll the cake carefully and spread the cream cheese mixture over the surface.
  9. Spoon cherry pie filling over the cream cheese layer.
  10. Roll the cake back up without the towel and chill in the refrigerator for at least 1 hour.
  11. Slice and serve with whipped cream on top.

Notes

For a different flavor, consider using almond extract in the cream cheese mixture or switching to other fruit pie fillings.
