- 4 large eggs

- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- Whipped cream for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a 15×10 inch pan.
- Beat together the eggs and granulated sugar until thick and pale.
- Fold in the flour, cocoa powder, and salt until well combined.
- Spread the batter evenly into the prepared pan and bake for 12-15 minutes, until the cake springs back when touched.
- Turn the cake onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake tightly with the towel and let it cool completely.
- Mix the cream cheese, powdered sugar, and vanilla extract until smooth in a separate bowl.
- Unroll the cake carefully and spread the cream cheese mixture over the surface.
- Spoon cherry pie filling over the cream cheese layer.
- Roll the cake back up without the towel and chill in the refrigerator for at least 1 hour.
- Slice and serve with whipped cream on top.
Notes
For a different flavor, consider using almond extract in the cream cheese mixture or switching to other fruit pie fillings.
