Description
Delicious cherry vanilla cupcakes filled with sweet cherry filling and topped with creamy cherry-flavored buttercream.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup cherry filling
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 2 tablespoons cherry juice (or milk, for frosting)
- Cherries for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- Combine the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fill each cupcake liner about 2/3 full with batter.
- Add a spoonful of cherry filling on top of the batter in each liner.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely.
- Beat together softened butter, powdered sugar, vanilla extract, and cherry juice for the frosting until smooth and fluffy.
- Frost each cupcake with the cherry vanilla frosting and top with a cherry for garnish.
Notes
Use room temperature eggs and butter for best results. Do not overmix once the flour is added.
