- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup Marsala wine
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat some olive oil over medium heat. Add the diced onion and cook until soft.
- Next, stir in the minced garlic and sliced mushrooms. Cook until the mushrooms are tender.
- Add the chopped chicken pieces to the skillet and season with salt, pepper, and Italian seasoning. Cook until the chicken is no longer pink.
- Pour in the Marsala wine and chicken broth. Let it simmer for about 5 minutes to combine the flavors.
- Stir in heavy cream and then transfer everything into a greased casserole dish.
- Top with shredded mozzarella cheese.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese melts and bubbles.
- Allow it to cool slightly before serving.
Notes
Serve with a fresh salad or roasted vegetables. Can be stored in the fridge for up to 3 days or frozen for up to 3 months.
