- 4 chicken thighs
- 1/4 cup honey
- 2 tablespoons chipotle in adobo sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup smoked gouda cheese, grated
- 1/4 cup milk
- 2 tablespoons butter
Instructions
- Mix honey, chipotle sauce, olive oil, salt, and pepper in a bowl. Marinate the chicken thighs in this mixture for at least 30 minutes.
- Preheat the grill to medium heat and cook the marinated thighs for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
- Boil the potatoes in salted water until tender.
- Drain the potatoes and return them to the pot. Add smoked gouda, milk, and butter. Mash until creamy.
- Serve the chicken thighs over the smoky gouda mashed potatoes.
Notes
For the best flavor, marinate the chicken thighs for several hours or overnight if possible. Use a potato masher for perfect creamy texture.
