Description

A delicious blend of sweet, smoky, and savory flavors from marinated chicken thighs paired with creamy smoked gouda mashed potatoes.

Ingredients

Scale
  • 4 chicken thighs
  • 1/4 cup honey
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup smoked gouda cheese, grated
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Mix honey, chipotle sauce, olive oil, salt, and pepper in a bowl. Marinate the chicken thighs in this mixture for at least 30 minutes.
  2. Preheat the grill to medium heat and cook the marinated thighs for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  3. Boil the potatoes in salted water until tender.
  4. Drain the potatoes and return them to the pot. Add smoked gouda, milk, and butter. Mash until creamy.
  5. Serve the chicken thighs over the smoky gouda mashed potatoes.

Notes

For the best flavor, marinate the chicken thighs for several hours or overnight if possible. Use a potato masher for perfect creamy texture.
