A delightful Citrus Almond Loaf Cake that combines refreshing lemon and lime zest with a hint of almond for a moist and tender treat, perfect for any occasion.

- 1 1/2 cups all purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp lime zest
- 1 Tbsp lemon zest
- 1/3 cup canola or vegetable oil
- 1/2 cup milk
- 2 eggs
- 2 Tbsp fresh lemon juice
- 2 Tbsp fresh lime juice
- 1/2 tsp almond extract
- 1 cup powdered sugar
- 1–2 Tbsp lemon or lime juice, or a mix of both
- 1/2 tsp almond extract
- 1/4 cup slivered almonds
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 1/2 x 4 1/2 bread pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the lime zest, lemon zest, oil, milk, eggs, lemon juice, lime juice, and almond extract. Mix until well combined.
- Pour the batter into the prepared loaf pan and sprinkle slivered almonds on top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by mixing powdered sugar with lemon or lime juice and almond extract until smooth.
- Once the cake has cooled, drizzle the glaze on top.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to one month.
