Description

A delightful Citrus Almond Loaf Cake that combines refreshing lemon and lime zest with a hint of almond for a moist and tender treat, perfect for any occasion.


Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp lime zest
  • 1 Tbsp lemon zest
  • 1/3 cup canola or vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp fresh lime juice
  • 1/2 tsp almond extract
  • 1 cup powdered sugar
  • 12 Tbsp lemon or lime juice, or a mix of both
  • 1/2 tsp almond extract
  • 1/4 cup slivered almonds

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 1/2 x 4 1/2 bread pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the lime zest, lemon zest, oil, milk, eggs, lemon juice, lime juice, and almond extract. Mix until well combined.
  4. Pour the batter into the prepared loaf pan and sprinkle slivered almonds on top.
  5. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the glaze by mixing powdered sugar with lemon or lime juice and almond extract until smooth.
  7. Once the cake has cooled, drizzle the glaze on top.

Store in an airtight container at room temperature for up to 3 days or freeze for up to one month.
