Description

Soft, tender muffins with warm flavors of apples and cinnamon, made moist with Greek yogurt.


Ingredients

  • 1 cup Greek yogurt
  • 1 cup diced apples
  • 1/2 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the Greek yogurt, sugar, eggs, vegetable oil, and vanilla extract in a bowl.
  3. Combine the flour, baking soda, baking powder, ground cinnamon, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the diced apples gently.
  6. Fill each muffin cup about 2/3 full and bake for 15-18 minutes or until a toothpick comes out clean.
  7. Allow to cool briefly before enjoying, or store for later.

Notes

Use tart apples for contrast or sweet apples for milder flavor. Don’t overmix the batter for tender muffins.
