- 1 cup Greek yogurt
- 1 cup diced apples
- 1/2 cup sugar
- 2 eggs
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the Greek yogurt, sugar, eggs, vegetable oil, and vanilla extract in a bowl.
- Combine the flour, baking soda, baking powder, ground cinnamon, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the diced apples gently.
- Fill each muffin cup about 2/3 full and bake for 15-18 minutes or until a toothpick comes out clean.
- Allow to cool briefly before enjoying, or store for later.
Notes
Use tart apples for contrast or sweet apples for milder flavor. Don’t overmix the batter for tender muffins.
