Description

These pie bars feature a buttery graham cracker crust filled with a tart and sweet blueberry lemon filling, perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 cups blueberries, fresh or frozen
  • 1/2 cup lemon juice
  • 1 cup sugar (for filling)
  • 3 eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  3. In another bowl, combine blueberries, lemon juice, 1 cup of sugar, eggs, salt, and vanilla. Whisk until smooth.
  4. Pour the blueberry mixture over the crust in the baking dish.
  5. Bake for 25-30 minutes or until set.
  6. Allow to cool before slicing into bars. Serve chilled or at room temperature.

Notes

Add a dusting of powdered sugar or a small dollop of whipped cream when serving for extra flair.
