These pie bars feature a buttery graham cracker crust filled with a tart and sweet blueberry lemon filling, perfect for any occasion.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 2 cups blueberries, fresh or frozen
- 1/2 cup lemon juice
- 1 cup sugar (for filling)
- 3 eggs
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined. Press the mixture into the bottom of a greased 9×9 inch baking dish.
- In another bowl, combine blueberries, lemon juice, 1 cup of sugar, eggs, salt, and vanilla. Whisk until smooth.
- Pour the blueberry mixture over the crust in the baking dish.
- Bake for 25-30 minutes or until set.
- Allow to cool before slicing into bars. Serve chilled or at room temperature.
Notes
Add a dusting of powdered sugar or a small dollop of whipped cream when serving for extra flair.
