Description

Delightful Gingerbread Latte Cookies infused with warm spices and a hint of espresso, perfect for the holiday season.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1/4 cup espresso or strong coffee
  • Sprinkle of nutmeg or cinnamon for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, salt, ginger, cinnamon, and nutmeg in a bowl.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy in another bowl.
  4. Beat in the egg and vanilla extract.
  5. Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
  6. Stir in the white chocolate chips and espresso.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool for a few minutes before transferring to a wire rack.
  10. Sprinkle a pinch of nutmeg or cinnamon on top before serving.
