Description

A moist and flavorful Mediterranean dessert made with ground almonds, orange, and cinnamon, perfect for any occasion.


Ingredients

  • 200g (2 cups) ground almonds
  • 100g (¾ cup) all-purpose flour or almond flour
  • 5g (1 teaspoon) baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 150g (¾ cup) granulated sugar
  • 3 large eggs
  • 120ml (½ cup) olive oil
  • 120ml (½ cup) freshly squeezed orange juice
  • Zest of 1 orange
  • 5ml (1 teaspoon) vanilla extract
  • 150g (¾ cup) granulated sugar (for the syrup)
  • 120ml (½ cup) water
  • 1 cinnamon stick
  • 5ml (1 teaspoon) lemon juice

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a 9-inch round cake pan.
  2. Mix the ground almonds, flour, baking powder, cinnamon, and salt in a medium bowl.
  3. Beat the sugar, eggs, and olive oil in a large bowl until smooth. Stir in the orange juice, zest, and vanilla extract.
  4. Combine the dry ingredients with the wet mixture, folding gently until just mixed.
  5. Bake for about 30-35 minutes or until a toothpick comes out clean.
  6. Prepare the syrup by heating sugar, water, cinnamon stick, and lemon juice until dissolved.
  7. Soak the cooled cake with warm syrup.
  8. Serve with powdered sugar or slivered almonds once cooled.

Notes

This cake is naturally gluten-free when made with almond flour. Store leftovers in an airtight container at room temperature.
