Description

A delightful way to enjoy a taste of the Mediterranean with marinated chicken, fresh veggies, and creamy feta cheese.


Ingredients

  • 1 lb Chicken breast
  • 1 cup Yogurt
  • 2 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 1 tsp Herbs (like oregano or thyme)
  • 2 cups Rice or mixed greens
  • 1 Cucumber, sliced
  • 2 Tomatoes, diced
  • 1/2 cup Olives
  • 1/2 cup Feta cheese, crumbled

Instructions

  1. Marinate chicken in yogurt, lemon juice, garlic, and herbs for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until fully cooked and golden brown.
  3. Prepare rice according to package instructions or use mixed greens as a base.
  4. Slice cucumber and tomatoes.
  5. Assemble the bowls by placing rice or greens at the bottom, adding the cooked chicken on top, and garnishing with cucumber, tomatoes, olives, and crumbled feta cheese.
  6. Serve immediately or store for meal prep.

Notes
