- 2 tablespoons Lime Juice

- 1 piece Avocado
- to taste Jalapeños

Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper.
- Make the glaze: In a skillet over medium heat, combine honey and lime juice. Cook until bubbly, stirring constantly.
- Cook the chicken: Add the chicken to the skillet, coating it evenly with the honey lime glaze. Sear until fully cooked, about 6–8 minutes on each side, or until juices run clear.
- Cook the rice: In a separate pot, cook the rice according to package instructions.
- Prepare the avocado rice: Once the rice is ready, mash the avocado into it. Stir until well combined, and season with salt and pepper to taste.
- Serve: Layer a scoop of avocado rice on each plate, top with honey lime chicken, and finish with jalapeños and toasted seeds.
Notes
Choose ripe avocados for the best texture and flavor. For added flavor, marinate the chicken in the honey lime glaze for at least 30 minutes before cooking.
