- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup diced fresh peaches
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon honey
- Peach slices for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- Cream together the butter and sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the butter mixture, mixing until just combined.
- Fold in the diced peaches.
- Fill each liner about 2/3 full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool.
- Combine the cream cheese, powdered sugar, and honey in a separate bowl until smooth.
- Once the cupcakes are cool, fill the center with the cream cheese mixture.
- Top with peach slices and serve!
Notes
Use ripe peaches for the best flavor. You can freeze the unfrosted cupcakes for later use.
