Description

Delightful cupcakes blending sweetness of honey and fresh peaches with creamy cream cheese.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup diced fresh peaches
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon honey
  • Peach slices for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Cream together the butter and sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the butter mixture, mixing until just combined.
  5. Fold in the diced peaches.
  6. Fill each liner about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool.
  8. Combine the cream cheese, powdered sugar, and honey in a separate bowl until smooth.
  9. Once the cupcakes are cool, fill the center with the cream cheese mixture.
  10. Top with peach slices and serve!

Notes

Use ripe peaches for the best flavor. You can freeze the unfrosted cupcakes for later use.
