- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons lime juice
- Zest of 1 lime
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch pan.
- Mix together flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared pan.
- Bake for 15-20 minutes or until lightly golden.
- Whisk together the eggs, granulated sugar, lime juice, lime zest, and baking powder until well combined.
- Pour this mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool, then dust with powdered sugar before slicing into bars.
Notes
For the best flavor, use fresh limes instead of bottled lime juice. Don’t overbake for a perfect texture.
