Description

Delightful mini cherry cheesecakes featuring a creamy filling, crunchy crust, and sweet cherry topping, perfect for any occasion.


Ingredients

Scale
  • 1 package of cream cheese, softened
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of whipped cream
  • 12 mini vanilla wafer cookies
  • 1 can of cherry pie filling

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine cream cheese, sugar, and vanilla extract in a mixing bowl until smooth.
  3. Fold in the whipped cream gently.
  4. Place mini vanilla wafer cookies at the bottom of a muffin tin lined with mini cupcake liners.
  5. Fill each liner with the cream cheese mixture.
  6. Bake for 15-20 minutes until set.
  7. Allow to cool, then top each cheesecake with cherry pie filling before serving.

Notes

Let cheesecakes cool fully before adding topping to prevent melting. Store leftovers in an airtight container in the refrigerator for up to 3 days.
