Description

Delightful and easy-to-make mini strawberry tartlets with a buttery crust and creamy pastry filling topped with fresh strawberries.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup milk
  • 2 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 egg yolks
  • Fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix flour and powdered sugar, then cut in butter until crumbly. Stir in egg yolk and cold water until a dough forms.
  2. Roll out the dough and cut into circles to fit mini tartlet pans. Press into pans and prick the bottoms with a fork.
  3. Bake for 15-20 minutes or until golden. Allow to cool.
  4. In a saucepan, heat milk until steaming. In another bowl, whisk cornstarch, sugar, egg yolks, and vanilla. Gradually add hot milk to the mixture, then return to saucepan and cook until thickened.
  5. Once cooled, fill cooled tart shells with pastry cream and top with fresh strawberries. Serve immediately.

Notes

For best results, ensure butter is very cold and let pastry cream cool before filling to avoid sogginess.
