- 2 cups heavy whipping cream
- 1 can (14 oz) sweetened condensed milk
- 1 tsp vanilla extract
- 1 ½ cups raspberry jam or puree
- 1 ½ cups crushed graham crackers or digestive biscuits
- 4 tbsp melted butter
- Fresh raspberries (optional, for topping)
Instructions
- Mix the crushed crackers with melted butter and then press this mixture into a springform pan to form the crust.
- In a large bowl, whip the heavy cream until stiff peaks form.
- Gently fold in the condensed milk and vanilla extract until well combined.
- Pour half of the cream mixture over the crust and swirl in half of the raspberry jam.
- Repeat with the remaining cream and jam, swirling everything to create lovely ripples.
- Freeze the dessert for at least 360 minutes, or even overnight, until it’s firm.
- Before serving, top with fresh raspberries if desired.
Notes
Serve cold for the best experience. Can be made ahead of time and stored in the freezer.
