Ingredients

  • 2 salmon fillets
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat your grill or stovetop skillet over medium-high heat.
  2. Season the salmon fillets with olive oil, salt, and pepper.
  3. Cook the salmon for 4-5 minutes on each side, or until cooked through.
  4. While the salmon cooks, in a bowl, combine the diced mango, red onion, jalapeño, lime juice, and a pinch of salt.
  5. Once the salmon is done, top each fillet with the mango salsa and garnish with fresh cilantro.
