Ingredients

  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 2 eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 cup powdered sugar (for topping)
  • 1 tablespoon melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Beat the softened butter and cream cheese until creamy in another bowl.
  4. Add in the sour cream, eggs, lemon zest, and lemon juice, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Mix melted butter with powdered sugar and drizzle over each muffin before baking.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool slightly before serving.
