- 1 lb boneless, skinless chicken breasts
- 1 cup buffalo sauce
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1 avocado, sliced
- 1/4 cup ranch or blue cheese dressing
- 1/4 cup cilantro, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut chicken breasts into bite-sized pieces and toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Spread the chicken on a lined baking sheet and bake for 15-20 minutes until cooked through.
- Warm the buffalo sauce in a small saucepan over low heat.
- Toss the baked chicken in the warmed buffalo sauce until fully coated.
- In individual bowls, add rice as a base and top with buffalo chicken, corn, black beans, cheese, and green onions.
- Add avocado slices and drizzle with ranch or blue cheese dressing.
- Garnish with cilantro and serve immediately.
Notes
For a milder version, mix buffalo sauce with ranch or use chicken thighs for more flavor.
