Description

This spicy Buffalo chicken bowl combines heat, cream, crunch, and comfort, featuring chicken baked in buffalo sauce served over a hearty rice base with fresh toppings.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1 avocado, sliced
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup cilantro, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken breasts into bite-sized pieces and toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread the chicken on a lined baking sheet and bake for 15-20 minutes until cooked through.
  4. Warm the buffalo sauce in a small saucepan over low heat.
  5. Toss the baked chicken in the warmed buffalo sauce until fully coated.
  6. In individual bowls, add rice as a base and top with buffalo chicken, corn, black beans, cheese, and green onions.
  7. Add avocado slices and drizzle with ranch or blue cheese dressing.
  8. Garnish with cilantro and serve immediately.

Notes

For a milder version, mix buffalo sauce with ranch or use chicken thighs for more flavor.
