A delightful lemon loaf that captures the bright, tangy essence of the Starbucks classic, featuring a moist crumb and a sweet zesty glaze.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup buttermilk
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy in another bowl. Add eggs one at a time, mixing well. Then mix in lemon juice and zest.
  4. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack.
  8. Mix powdered sugar with lemon juice for the glaze until smooth and drizzle over the cooled loaf. Enjoy!

Notes

For best results, use room temperature eggs and butter. Do not overmix once you add the flour, and check the loaf at 50 minutes.
