Instructions
- Beat the softened cream cheese with granulated sugar, one egg, and vanilla extract in a bowl until smooth.
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Whisk together the all-purpose flour, cocoa powder, baking soda, and salt in a separate bowl.
- Cream the softened unsalted butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then mix in buttermilk, vanilla, vinegar, and red food coloring until smooth.
- Fold the dry ingredients into the wet ingredients gently until just combined.
- Spoon the batter into the liners, adding a spoonful of cheesecake filling in the center, then top with more batter.
- Bake for 18-22 minutes until a toothpick comes out clean.
- Allow cupcakes to cool on a wire rack, then top with frosting and garnish with strawberries.
