  • 3 cups vanilla wafers (about 2 sleeves)
  • Optional: 1 cup fresh blueberries for garnish

Instructions

  1. Prepare the strawberries: Wash, hull, and slice about 4 cups of fresh strawberries. Set aside a few whole or halved berries for garnish if you like.
  2. Whip the cream: In a chilled large mixing bowl, pour in 2 cups of heavy whipping cream. Add 1/2 cup powdered sugar and 1 teaspoon vanilla extract. Use an electric mixer on medium-high speed to whip the cream until stiff peaks form, which should take about 3 to 5 minutes.
  3. Layer the cake: Start by spreading a thin layer of whipped cream at the bottom of a 9×13-inch dish. Next, add a single layer of vanilla wafers to cover the base evenly. Spoon and spread a layer of whipped cream over the wafers, and sprinkle the sliced strawberries on top. Repeat the layers of wafers, cream, and berries until all your ingredients are used. Finish with a generous layer of whipped cream and top it off with the reserved strawberries.
  4. Chill overnight: Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight. This allows the wafers to soften and the flavors to meld together beautifully.
  5. Serve: Slice the cake into squares using a sharp knife, wiping it clean between cuts for neat pieces. If you’d like, garnish each piece with fresh blueberries or mint leaves for an extra festive touch.
