Description

These Strawberry Mango Cupcakes bring a burst of tropical flavor, topped with creamy buttercream, perfect for celebrations or a delightful treat.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 1/4 cups caster sugar
  • 3 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups full cream milk
  • 1/2 cup vegetable oil
  • 2 tbsp Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • Pink and red food gel (for strawberry flavor)
  • 1 tsp strawberry flavoring
  • Yellow food gel (for mango flavor)
  • 1 tsp mango flavoring
  • 1 batch American or Swiss Meringue Buttercream
  • 1 cup granulated sugar
  • 10 limes, cut into 40 wedges
  • 10 strawberries, halved

Instructions

  1. Preheat your oven to 275°F (140°C) for fan-assisted mode.
  2. Mix the flour, sugar, baking powder, and salt in a large bowl.
  3. Cream the softened butter, then add the eggs one at a time, beating well after each addition.
  4. Combine the milk, vegetable oil, Greek yogurt, and vanilla extract in the butter mixture.
  5. Add the dry ingredients gradually to the wet ingredients, mixing until just combined.
  6. Divide the batter into two bowls. In one bowl, add pink and red food gel and strawberry flavoring; in the other, add yellow food gel and mango flavoring.
  7. Pour the strawberry batter into cupcake liners, then layer with the mango batter if desired.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow the cupcakes to cool completely.
  10. Prepare the buttercream with the same color gels and flavors as the cupcakes; then frost the cooled cupcakes.
  11. Garnish with lime wedges and halved strawberries.

Notes

Store in an airtight container at room temperature for up to three days, or in the fridge for up to a week. Freeze without frosting for longer storage.
