- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1/2 red onion, sliced
- 4 large tortillas or wraps
- 1 cup lettuce, chopped
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Combine the shredded chicken, BBQ sauce, pineapple chunks, red bell pepper, red onion, salt, and pepper in a large bowl.
- Lay a tortilla on a flat surface and layer with lettuce and the chicken mixture.
- Sprinkle with cheese if desired.
- Roll the tortilla tightly, folding in the sides as you go.
- Serve immediately or wrap in foil for later.
Notes
To keep wraps fresh, wrap each one in foil or plastic wrap. Store them in the fridge for up to 3 days. If freezing, wrap tightly and use within 1 month. Thaw in the fridge before warming.
