Description

A delightful dessert that combines the sweetness of pineapple and the tartness of lemon, perfect for gatherings or cozy nights at home.


Ingredients

  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup lemon curd
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup butter, melted
  • 1 cup shredded coconut (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread the crushed pineapple with its juice evenly across the bottom of a greased 9×13 inch baking dish.
  3. Spoon the lemon curd over the pineapple layer.
  4. Sprinkle the dry cake mix evenly over the lemon curd layer.
  5. Drizzle the melted butter over the cake mix, ensuring it’s evenly distributed.
  6. If desired, sprinkle shredded coconut and nuts on top.
  7. Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and bubbly.
  8. Let cool for a few minutes before serving.
