- 1 can (20 oz) crushed pineapple, undrained
- 1 cup lemon curd
- 1 box (15.25 oz) yellow cake mix
- 1/2 cup butter, melted
- 1 cup shredded coconut (optional)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the crushed pineapple with its juice evenly across the bottom of a greased 9×13 inch baking dish.
- Spoon the lemon curd over the pineapple layer.
- Sprinkle the dry cake mix evenly over the lemon curd layer.
- Drizzle the melted butter over the cake mix, ensuring it’s evenly distributed.
- If desired, sprinkle shredded coconut and nuts on top.
- Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or whipped cream for extra indulgence. Store leftovers in an airtight container in the fridge for up to 3 days.
